Apple Oatmeal Cookies


Can you tell that I've been in the baking mood with two cookie recipes back to back?!  What is it about Fall that puts us in the baking mood?  So these cookies have the perfect combination of apples and oatmeal that will give you a great excuse to eat them for breakfast!  And by the way, freshly picked apples from your local orchard will just make these so much yummier.

Ingredients
1/2 cup softened butter
1/2 cup light brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 large egg
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1 3/4 cups old-fashioned rolled oats
1 large apple (peeled, cored, and diced into small pieces)
1/2 cup chopped walnuts or pecans (optional)

Directions
Cream butter and sugar together.  Add eggs and vanilla and beat well.  Combine dry ingredients and mix with wet ingredients.  Add oats and diced apples and finish mixing until well combined.  Bake at 350 degrees for 10-12 minutes.
