I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Homemade Almond Roca


Ingredients
4 sticks of butter
2 cups light brown sugar
1 1/2 cups almonds, coarsely chopped
24 ounces milk chocolate chips
1 teaspoon coconut oil

Directions

Spread 3/4 cup almonds on greased cookie sheet.  

Melt butter and brown sugar over medium high heat while stirring frequently.  Use a candy thermometer and cook until 290 degrees and it's bubbly and thick.  Pour candy evenly on top of the almonds.  


While candy is cooling, melt chocolate chips and coconut oil in microwave.  Microwave 30 seconds at a time, stirring between each increment.  Cover candy with melted chocolate and sprinkle remaining almonds on top.  


Allow to set in the fridge for a couple of hours.  This recipe makes about 2 pounds of candy.
