I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Whole Wheat Oatmeal Applesauce Banana Muffins


Let me just say that these are very hearty, healthy muffins.  My 3 year old son didn't like them but then he's recently entered a very picky stage of eating habits.  The kid could probably live off chocolate chip pancakes right now and be happy as a clam.  The muffins are freezer friendly and they are great for those health conscious eaters that are craving muffins, but not wanting the sugar and calories that go with them.

Ingredients
1 cup mashed banana
1/3 cup honey
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 egg
3/4 cup whole milk
1 1/2 cups whole wheat flour
1 cup steel cut quick oats (I used Bob's Red Mill)
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon

Directions
Whisk all wet ingredients together in a large bowl.  Add dry ingredients and mix until just combined. Don't over mix.  Pour into prepared muffin pan.  Bake at 350 degrees for 15-20 minutes or until toothpick inserted in middle comes out clean.
