Quick Cast Iron Skillet Honey Yeast Rolls


I made these rolls for the first time last night.  They were melt in your mouth, can't stop eating, yummy goodness!  And I love that the recipe uses honey instead of processed sugar.

Ingredients
3 tablespoons active dry yeast
1 3/4 cups warm water
1/2 cup honey
1/2 cup melted butter, and some additional for brushing
1 1/2 teaspoons salt
2 large eggs, beaten
4-6 cups all-purpose flour

Directions
Combine the yeast and warm water in a large mixing bowl.  Let it activate for 5 minutes or until bubbly.  Stir in the honey.

On low speed, mix in 1/2 cup melted butter, salt, and eggs.  Slowly add the flour cup by cup until fully incorporated and the dough pulls away from the mixing bowl.  This can take between 4-6 cups of flour.

Form dough into rolls and place into cast iron skillet.  Set aside and allow to rise 20 minutes.  Brush the rolls with melted butter.  Bake for 25 minutes at 400 degrees or until the tops are golden brown.  Remove from the oven and brush with more melted butter and sprinkle with a little salt.
