Honey Peanut Butter Cookies

I'm trying to cut us back on our sugar intake.  Some days we do well and other days...well,
it just depends on how stressful raising toddlers can be.  For our snack this afternoon I tried making peanut butter cookies and substituting honey instead of sugar.  I ended up adding 1/2 cup organic sugar since the batter didn't taste right with just honey, but cutting out the additional 1 1/2 cups of sugar is a huge step.  They turned out super soft, moist, and delicious.  And doesn't using organic sugar still make the cookie healthy?  At least it sounds better that way.
1/2 cup softened butter
1 cup creamy peanut butter
1 cup honey
2 large eggs
3 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees.  In a mixing bowl, whip butter, peanut butter, and honey on medium speed for about 2 minutes until well combined and fluffy.  Add eggs and vanilla and mix well.  Add the remaining ingredients and beat until combined.  Form dough into rolls and place on baking sheet.  Flatten with a fork.  Bake at 350 degrees for 10-12 minutes.
