There is one meal I'm not thrilled about this week but I'm trying to use some food that's been in the freezer. Salmon....yuck! I'll just have to suck it up, hold my nose and swallow the food. I'm hoping to find a really great recipe between now and Wednesday!

ReplyDeleteLittle late, but my most favorite way to cook salmon is to keep it simple - little olive oil with salt, pepper & garlic (I like to be generous with the pepper and garlic). Sometimes I add a little shredded parmesan to it also. I LOVE salmon though, so that helps :) (I know you can't quite get fresh Lake Michigan fish here :), but good salmon shouldn't have an overly fishy smell, it should be one of least "smelly" fish.)
ReplyDeleteThanks! I tried marinating it in lemon juice, salt, pepper and parsley. Then I pan fried it in coconut oil and just to darken the outside and then baked it for about 8 minutes in the oven. It was tolerable but I'm not a fish person at all. My husband enjoyed it. The parmesan cheese sounds great though so maybe next time I'll try that!
