I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Homemade Buttermilk Pancakes

We didn't any plans on Saturday morning so I had plenty of time to try a new recipe for buttermilk pancakes.  We all agreed that this was our new favorite pancake recipe!
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
1/2 teaspoon vanilla
3 eggs
1/3 cup butter, melted
Combine flour, sugar, baking powder, baking soda and salt in a large bowl.  In a separate bowl, combine buttermilk, milk, eggs, melted butter, and vanilla.  Keep the two mixtures separate until you are ready to cook.
Heat a lightly oiled griddle or frying pan over medium heat.  Pour the dry mixture into the wet mixture and stir gently.  Do not over stir.  Batter will be thin.  Pour the batter on the hot griddle.  Brown on both sides and serve hot.  Recipe makes approximately 15 pancakes.
These pancakes are completely delicious on their own but the kids and I also love chocolate chips in our pancakes. Be creative and add your favorite toppings: chocolate chips, pecans, walnuts, blueberries, etc.
