About Me

My photo

Life is beautiful whether you're soaking in sunshine or caught in a thunderstorm. I take the beauty of life for granted too often. I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. My day is made when free samples fill my mailbox. I love discovering a new product and sharing it with others. I'm addicted to coupons and every penny counts. I hope you will enjoy reading my posts and will share your success stories with me as well.

Comfort Meal - Ham, Beans, & Cornbread

It's rather funny that I used to think Ham, Beans, & Cornbread was something only old people liked to eat.  I hated it when Mom would make this meal growing up.  This ranked on the despise foods lists along with sauerkraut and liver & onions.  Now it's one of those comfort meals I make on a cold, rainy day.  There is something about eating this meal that brings back memories of our family sitting together at the dinner table.  It reminds me of my Papa crumbling cornbread in his milk and drinking it while grossing us grandchildren out.

Ham & Beans are super easy to make.  I love using the EarthFare Organic Canned Pinto Beans.  Whenever we have ham (which isn't too often) I'll save the ham bone with some extra meat on it and let the bone work its magic.  Ham bone, extra ham and pinto beans all go in the crockpot.  I'll add a couple cups of water, minced garlic, sliced onions, and black pepper.  The ham is salty enough so I never add any extra salt.  Cook on low for 4-6 hours in the crockpot and your meal is ready!  My new favorite cornbread is Krusteax Natural Honey Cornbread & Muffin Mix.  It's OH SO GOOD!  Add a glass of milk to drink and I feel like I'm living my childhood days again.  Except this time around, I actually enjoy eating the ham and beans...
