Chocolate Fudge Cake


Wow!  I love this cake!  I made it twice last week and the second time came out even better than the first.  And I promise that we are not oinkers and eating all this cake by ourselves.  We each had one piece from each cake and the rest was given to extended family and friends.  This cake is extremely moist and fudgy.  Make sure to have a tall glass of milk ready to go with your piece or pieces of cake.
 
Ingredients
1 cup butter
1 cup very hot water
4 tablespoons cocoa
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla
2 cups flour
2 cups sugar
1/4 teaspoon salt
1 teaspoon baking soda
 
Frosting
3/4 cup butter
4 tablespoons of cocoa
6 tablespoons of milk
1 teaspoon vanilla
1 pound box of powdered sugar
1/2 cup chopped pecans (optional)
 
Directions
In a mixing bowl, combine flour, sugar, and salt.
 
In a saucepan, melt butter over medium heat. Add cocoa. Stir together.
Add hot water, and stir for 30 seconds until well blended.
Pour over flour mixture, and stir lightly to cool.
 
In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture.
 
Pour into a 9x13 greased baking dish and bake at 350-degrees for 35-40 minutes or until toothpick inserted comes out clean.
 
While cake is baking, make the icing. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.
