Pumpkin Waffles

Reason #56 that I love Fall....PUMPKIN WAFFLES!  I made these the other morning for Sunday morning breakfast and they were a huge hit!  I love the fact that they have whole wheat flour in them to make them extra filling.
 
Ingredients
1/4 cup unsalted butter, melted
1/3 cup brown sugar, packed
4 eggs, beaten
1 cup canned pumpkin
2 cups buttermilk
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup white whole wheat flour (such as King Arthur)
1 1/2 cups all purpose flour
 
Directions
Whisk together buttermilk, pumpkin, eggs, brown sugar, and  butter.  Stir salt, baking soda, cinnamon and flour into wet mixture until smooth.  Coat waffle iron with non stick cooking spray.  Cook waffles for 4-5 minutes or until golden brown.
 
Be sure to coat the waffle iron on every batch.  This recipe likes to stick to the iron.
