I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Incredibly Yummy Eggless Pancakes

I wanted to make pancakes this morning for breakfast but realized I didn't have any eggs.  So what to do?  Google "homemade pancakes without eggs" of course.  I love the Internet!  I came across this recipe and the result was so incredibly yummy that I will probably never put eggs in my pancakes again.
1 cup all-purpose flour
1 teaspoon sugar
1/4 teaspoon cinnamon
2 teaspoons baking powder
1 cup whole milk (next time I might try buttermilk)
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla
2 tablespoons butter, melted
Whisk together the dry ingredients in a bowl.  In a liquid measuring cup, measure 1 cup milk.  Add the vegetable oil, water, vanilla, and melted butter.  Stir in the wet ingredients to the dry ingredients. Do not over-mix. Lumps are perfectly fine.
Heat a griddle at medium-high heat.
When the pan is hot enough, pour a ladleful of batter on the pan for each pancake. Cook until bubbles appear on the face of the pancake.  Carefully flip the pancake and cook until its golden brown.
