I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Homemade Dairy-Free Coconut Ice Cream Milkshake

We recently made some homemade dairy-free coconut ice cream and it turned out fairly well.  It took about 1 1/2 hours for the ice cream maker to make it thick of enough but it was still more like a milkshake rather than ice cream.  So it ended up being a delicious coconut milkshake instead.  Here's the recipe we used:

4 cups of Coconut Milk
3/4 cup granulated sugar
1 Tbsp vanilla

Stir the milk and sugar together until sugar is fully dissolved.  Add vanilla and pour mixture into electric ice cream maker.

Mike loves making up his own concoctions so he experimented by adding watermelon to it and it was very refreshing.  Next he tried adding orange juice and that was super yummy too!  This is a great recipe to use for people who can't have dairy, a very nice refreshing drink on a hot summer day!

    The orange juice sounds refreshing! Does it taste like a dreamsicle? May have to make it soon! :)
