I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. My day is made when free samples fill my mailbox. I love discovering a new product and sharing it with others. I'm addicted to coupons and every penny counts. Quick Macaroni Salad with Chicken or Tuna

Mom would make this macaroni salad a lot during the summers when it was too hot to cook.  It's so simple to make and with adding lots of fresh summer veggies from, it's so delicious!

 Ingredients
One box of Elbow or Seashell Macaroni
Two cans of Tuna or Chicken, whichever you prefer
Chopped Carrots, Celery, Pencil onions, black olives, pickles, red and yellow pepper
Salt and Pepper
Mayo
Shredded or Cubed Cheese

Boil pasta until tender.  Rinse well in cold water and drain.  Add rest of the ingredients.  I normally add about 1/2 cup of mayo but you can add more depending on how much you want.  Last night I used cubed mozzarella cheese.  The great thing about this recipe is you can add your own favorite veggies and take away any that you don't like.  Peas, pickles, chopped egg are some more items you can add.  You can experiment with other dressings such as Italian or adding a little mustard.   Refrigerate for a couple hours.  And this is one of those recipes that I think is always better the next day for lunch.  I normally serve this with toast or crackers.
