I have a supportive husband who I don't want to live life without, a beautiful son who is always reminding me of the simple things that really matter, and an independent daughter who is teaching me to throw schedules out the window and live in the moment. Delicious Chicken Salad Recipe

My sister-in-law, Rebekah, made these delicious chicken salad sandwiches a couple weeks ago.  I couldn't wait to get the recipe to make this for Mike.  Our supper menu tonight: chicken salad sandwiches.  :)

3 cups pineapple juice
1/3 cup soy
3 lbs boneless, skinless chicken breasts
2 cups water
1/2 cup of each: red pepper, yellow pepper, sweet onion, and celery
1/2 teaspoon garlic salt
1/4 teaspoon seasoned salt
1/2 teaspoon pepper
1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
1 1/2 cups mayo (I only use 1 cup mayo, but you can use more depending on how much mayo you like to taste)


  • In a small bowl, combine pineapple juice and soy sauce.  Pour 1 1/2 cups into a large Ziploc bag and add chicken breasts.  Turn to coat and refrigerate overnight.  Reserve the remaining marinade.
  • Drain & discard marinade from chicken.  In a large saucepan combine chicken, water, and reserved marinade.  Bring to a boil, reduce heat.  Cover and simmer for about 15 minutes or until 170 degrees.  Drain, cool slightly, shred chicken.
  • In a large bowl combine shredded chicken, peppers, onion, celery, seasonings, and mayo.  Toss to coat.
