- In a small bowl, combine pineapple juice and soy sauce. Pour 1 1/2 cups into a large Ziploc bag and add chicken breasts. Turn to coat and refrigerate overnight. Reserve the remaining marinade.
- Drain & discard marinade from chicken. In a large saucepan combine chicken, water, and reserved marinade. Bring to a boil, reduce heat. Cover and simmer for about 15 minutes or until 170 degrees. Drain, cool slightly, shred chicken.
- In a large bowl combine shredded chicken, peppers, onion, celery, seasonings, and mayo. Toss to coat.
