Chocolate Eclair Dessert

This dessert is an old time favorite of a lot of my friends and family.  My mom made it often and you could always be sure to find it at a church function.  I can't even tell you the number of times I've eaten this dessert but I've never made it myself.  I made it last night and was shocked at how super easy it was to make with very little prep work.  It will definitely be on my list of quick and easy desserts to make.

2 individual packages of graham crackers
2 (3-ounce) packages of instant vanilla pudding mix
3 cups milk
1 (8-ounce) container frozen whipped topping, thawed
1 jar of hot fudge topping

Line the bottom of a 9x13 pan with graham crackers.  In a large bowl, combine pudding mix and milk.  Stir well for about 3 minutes until pudding is thick.  Stir in whipped topping to pudding mixture.  Spread half of mixture over graham cracker layer.  Top with another layer of graham crackers and the remaining frosting.  Top all with a final layer of graham crackers.  Heat hot fudge topping in microwave for about 35 seconds.  Pour over top layer of graham crackers and use knife to smooth.  Refrigerate for a minimum of 12 hours for best taste.

I would love to know if you have a different recipe for this chocolate eclair dessert.  Anything to make it stand out more, something to make the filling more rich and fancy, or a different type of cracker you use?

  1. Yes, it is SUPER easy to make and delicious! The last church function I took it to there were no leftovers in my dish! =)

    I have used a container of chocolate fudge frosting as well for the topping (since I can usually get them cheaper). Just stick the frosting into the microwave for a few seconds and pour it over the graham crackers. It also tastes great with the cheesecake flavored pudding!
