Chicken Enchiladas Recipe

This was one of my favorite recipes of my Mom's.  I would request these enchiladas on my birthday and when I came home from college to visit.  I found the recipe earlier this week when I was cleaning out my recipe cabinet.  Chicken breasts have been on sale this week at Bi-Lo (BOGO) so I've been able to make more chicken recipes than normal.  Hope you enjoy!

Ingredients:
4 large chicken breasts
7 Tablespoons Butter
7 Tablespoons Flour
1 1/2 cups chicken broth
1 1/2 cup milk
1 cup sour cream
4 ounce can of green chilies
1/2 cup green pencil onions
2 cups cheddar cheese
8 large flour tortillas or 12 small flour tortillas

                                        Directions:
Cook chicken in large saucepan with 2 cups of water until tender. (about 8-10 minutes)  Chop chicken in chunks or shred chicken depending on how you prefer.  Melt margarine in a saucepan, add flour and cook for one minute.  Pour in chicken broth and milk.  Cook until thick.  Add green chilies, sour cream, cubed or shredded chicken and pencil onions and stir until well mixed.  Spoon chicken mixture onto flour tortilla and sprinkle with cheddar cheese.  Make sure the sauce is very light in the tortilla  because you will want to use a good amount on top of the tortillas.  Place wrapped tortilla in a greased 9x13 pan.  Once all tortillas are made and placed in pan, pour remaining sauce over all the tortillas.  Sprinkle with remaining cheese.  Bake at 350 degrees for 30-35 minutes.
