Homemade Peppermint Oreos


Ok, so I just finished making these homemade peppermint oreos and OH MY GOSH, they are seriously the best cookie I've tasted in a very long time!

Ingredients:
2 boxes of Devil's Food cake mix
4 eggs
2/3 cup vegetable oil

Frosting:
1 (8 ounce) package cream cheese, softened
1/2 cup (1 stick) butter, softened
4 cups powdered sugar
1 teaspoon peppermint extract

Directions:
Preheat oven to 350 degrees. In a large bowl combine the cake mix, eggs, and oil. The batter will be very stiff. Roll batter into 1 inch balls and place on cookie sheet. Flatten balls slightly with fingers. Bake 12 minutes. Let cool slightly on cookie sheet before removing to wire rack to finish cooling.

In a small bowl, combine the cream cheese and butter until completely blended. Gradually add in the powdered sugar and peppermint extract and mix until the icing is smooth.

Spread one cookie with icing and top with another cookie.

Ideas: You can add red or green food coloring to frosting. You can roll the edges of the cookie in sprinkles or crushed candy cane.

  1. LOL....Ashley, they are so similar to Whoopie pies!!! No wonder you like them so much. Of course, with the peppermint it gives them a Christmasy touch!!! They sound YUMMY!!!
